Conference Traditions

Where is Fall? It is not here, I can tell you. It was 87 degrees today, and I don't see hardly any colored leaves. I do not feel like Fall is here. I can't bring myself to get out my decorations, and I normally can't wait to put out my Fall/Halloween decor. I associate Conference week-end with the start of Fall. There is usually a hint of cool and crisp weather, and many leaves are already fall colors. This year is weird. Actually, I don't remember what it was like last year...we had just barely moved here.Maybe it is normal for Kansas. I don't know.

So, I have thought for a while about having some kind of conference traditions. I haven't started any yet, as I am still trying to think of what things would be best. Today we started off with a breakfast of Oatmeal pancakes. I made some homemade Pico de Gallo (salsa) and guacomole. We munched on it during the afternoon session.I like the homemade salsa and guac instead of a big lunch or dinner. Just snacks.Yummy. My dad used to make homemade scones with honey butter when we were young and I loved it. It wasn't for conference, but it might make a good tradition. I have thought about making scones and homemade root beer for Halloween. I probably wiill try it this year.

So, here is the Pico de Gallo recipe I made today.

Pico de Gallo

8 good-sized Roma tomatoes, diced
2 Tbls. minced garlic
1/4 cup fresh cilantro, chopped
1 large white onion, diced
2 tsp. salt
ground pepper to taste
optional jalapeno pepper, diced

Combine tomatoes, onion, garlic, salt and pepper in a large bowl.Add chopped cilantro, and jalapeno if using. Taste and adjust salt, pepper, and cilantro until you reach the desired flavor.

I am loving these flavors lately. Yesterday, we had tacos for dinner along with this super yummy confetti rice recipe. That is why I made the salsa..I had leftover cilantro I needed to use. It seriously is sooooo good. It is served warm, but i snacked on it later straight from the fridge, and it was good cold too.

Tex Mex Confetti Rice

1 cup water
1/2 cup uncooked rice
1 small tomato, chopped
1 (15 oz.) can black beans, rinsed and drained
1 (15 oz.) can whole kernel corn, drained
1 jalapeno, chopped (optional)
2 green onion, chopped
1/2 cup chopped fresh cilantro or (1 tbsp dried*)
1/4 cup lime juice
1 tsp salt
1/4 tsp pepper

Bring water to a boil in a saucepan and stir in rice. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed and rice is tender. Add remaining ingredients and cook over medium heat, stirring constantly until heated through.

Mmm your recipes sound good. Like the idea about scones...yummmy. Love scones! thanks for your comment about the nursing bra. Seriously, I want to shoot myself before trying on more of them... it totally sucks and I'm glad to know you hate it, too. :) But I'm sorry you hate it. But it's nice to know that I'm not just losing my freaking mind!! hahaha

Ever since we got married we have had cinnamon rolls for conference weekend. A couple years ago I decided my cooking skills were decent enough to make them homemade (well, with a breadmaker for the dough). This year I decided it was a set in stone tradition, Dave saw the cinnamon rolls and said, "Yay, conference!" I love to make a whole bunch and deliver them to neighborhood friends while Jason is gone to the Priesthood session, but I was too big for that this year. Maybe it will be back for April's conference!
